Second, I want to get back into posting about fashion and clothing. I am going to put together a few of those posts and show you some of what I have been wearing lately. Outfit posts are so fun, and I miss them. I just haven't had the time to devote to them, but I'm going to make time.
Lastly, the Less than Domestic Goddess is what I call myself, right? Well, I must have sipped the Domestic Goddess Kool-Aid, my friends, because look what I (with a ton of help from mom) made for dinner.
Gluten-Free Goddess's Sweet Potato Black Bean Enchiladas!
I have never made enchiladas in my life. I have never cooked with sweet potatoes in my life. They were sooooo good and cheap and healthy. I was in Whole Foods for a really long time finding all the best ingredients according to my diet restrictions. I also might have used a lot more cheese than is appropriate. But, whatever. They were a huge hit, and will definitely be made again.
Anyone care to share their favorite healthy meal recipe? I'm going to try to make this cooking thing a somewhat regular occurrence around here. ;)
